At a regular sit-down restaurant, the order comes in steps. Someone seats you. The server brings water and menus and asks about drinks first. A few minutes later they come back for the food. Nobody expects you to order everything at once, so it's fine to say "Could we have a few more minutes?"
American servers are friendly and talk a lot. They may tell you their name and the specials. You don't need to say much back: a smile, "Thanks," and your order. When you're not sure, ask them. "What do you recommend?" is a question servers like, because they know the menu well.
