Meaning
To "play it by ear" is to decide what to do as things happen, instead of making a fixed plan. It comes from music: a musician who plays by ear listens and plays without written notes. So when you play a day by ear, you listen to the situation and respond.
It's casual and relaxed, used most for social plans, travel and weekends: "We'll play it by ear once we see the weather." It tells the other person you're flexible and happy to adjust.
Be careful using it at work when someone expects a plan. If a client or a manager asks how you'll handle a launch and you say "I'll play it by ear," it can sound like you haven't prepared. There, say what's fixed and what's flexible: "The main steps are set, and we'll adjust the details as we go."
