Meaning
"Fair enough" means "That's a reasonable point, I accept it." You say it when someone gives you a reason and you can't really argue with it, even if you wanted a different answer. It's not always full agreement. Often it means "I see why you think that, so I'll stop pushing."
It is casual, calm and very common in the US and even more in the UK. It works with friends, coworkers and service staff. Because it closes a small disagreement, it can sound a little short if you say it too fast or with no eye contact. Add a second sentence ("Fair enough. Let's do Tuesday, then.") and it sounds warm and cooperative.
