The pattern
"I can't help" plus an -ing verb means you do something without being able to stop yourself. "I can't help laughing" means the laugh comes out on its own. "I can't help thinking about it" means the thought keeps returning. Nobody is asking for help here; it is a fixed phrase, and "help" means "prevent".
It is the pattern for feelings, habits and reactions you don't fully control: laughing, worrying, wondering, noticing, staring at the cake. It often comes with a small apology built in, because you are admitting you couldn't stop.
