Meaning

To stay in touch is to keep contacting someone after you stop seeing them every day: messages, calls, the occasional coffee. You say it when someone is moving away, changing jobs, or when a trip or course is ending. "Keep in touch" means the same thing, and you will hear both.

The picture is a hand on someone's arm: as long as you are touching, you are connected. It is warm and neutral, fine for coworkers, classmates and friends. One honest note: "let's stay in touch" is sometimes a polite goodbye that nobody follows up on. If you really mean it, add a detail: "I'll message you when I'm in Toronto."
